Spicy Purple Sweet Potato Fries – crispy oven baked fries, full of antioxidants and actually good for you!
If you like potato fries, but want to do something good for your body as well, baked Spicy Purple Sweet Potato Fries may be just what you’re looking for.
Purple food is so rare. Except blueberries, blackberries and red cabbage, I cannot think of any. And it is sooo healthy and full of antioxidants.
One of the most tasty ways to prepare any vegetables is to bake them in the oven with addition of little olive oil and some spices. I decided to use Cajun spice mix because I like the blend of oregano, thyme, garlic, paprika and pepper. You can add some more cayenne pepper to make it very hot, if you prefer.
I peeled the sweet potatoes, but you don’t need to. They say that potato skin is also very healthy. Just be sure to wash it properly.
Cornstarch or potato starch will help to make potatoes crispier, but is not absolutely necessary and you can skip it if you’re on low-carb diet.
Serve Spicy Purple Sweet Potato Fries with ketchup or yogurt/mayo/mustard dipping sauce. They are an excellent side dish to your meaty or vegetarian/vegan burgers.
- 1 lb purpe sweet potatoes (yams)
- 1 1/2 tsp salt
- 1 Tbsp Cajun seasoning (dry oregano, dry thyme, garlic powder, cayenne pepper, smoked paprika, black pepper)
- 1 Tbsp cornstarch
- 3 Tbsp olive oil
Cut sweet potatoes (peeled or unpeeled) in wedges. Place in a large bowl.
In a small bowl, combine salt, Cajun seasoning and potato starch. Sprinkle over sweet potatoes and toss to coat.
Drizzle with olive oil and mix well.
Place on a baking tray lined with baking paper. Bake in 200 C (400 F) oven for 15-20 minutes.
Take out of the oven. Flip wedges with two forks or kitchen tongs. Put back in the oven and bake for another 5-10 minutes or until soft on the inside.
